Ingredients

For the Dry Batter

For the Egg Wash

  • 2 eggs
  • ¼ cup water

For the Breading

  • 2 cups panko breadcrumbs

For the Spicy Caesar Dressing & Salad

  • 1 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, freshly grated
  • 1–2 tsp Calabrian chili paste (adjust for heat)
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp fresh lemon juice
  • ¼ cup freshly grated Parmesan cheese
  • 1–2 tbsp extra virgin olive oil
  • 1–3 tbsp water or milk (to thin if needed)
  • 2 cups lettuce, chopped

To Assemble

  • 4 large flour tortillas

Method

1. Season the Chicken Pat the chicken cutlets dry. Season both sides generously with salt, garlic powder, smoked paprika, and black pepper.

2. Set Up Breading Station

  • Dish 1: Mix flour, cornstarch, salt, garlic powder, smoked paprika, and black pepper.
  • Dish 2: Whisk eggs with water.
  • Dish 3: Combine panko breadcrumbs with dried parsley.
