Ingredients

For the Beef Filling

  • 1 lb ground beef (80% lean, 20% fat)
  • 1 onion, finely diced
  • 1 tbsp fresh garlic, minced
  • 1 cup bell pepper, chopped
  • 1–2 Serrano peppers, chopped (optional, for heat)
  • 3 tbsp tomato paste
  • Salt to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • 1 tsp red chili flakes
  • 1 tsp black pepper
  • 1 tsp cumin powder
  • ¾ cup water
  • 2 tbsp oil

To Assemble

  • 4 large tortillas, cut in half
  • 3 tbsp butter (or garlic butter)
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded

Method

1. Make the Beef Filling Heat 2 tbsp oil in a pan over medium heat. Add diced onions and minced garlic. Sauté for 1–2 minutes until the onions turn translucent.

Add the ground beef and cook for 3–4 minutes until it changes color and is no longer pink.

Season with salt, black pepper, smoked paprika, garlic powder, chili powder, red chili flakes, and cumin powder. Mix well.

Stir in the tomato paste and cook for 2–3 minutes. Add ¾ cup water, mix, and cook on medium heat for 8–10 minutes until the beef is fully cooked and most of the water has evaporated.

Add chopped bell peppers and Serrano peppers. Sauté for another 2–3 minutes. Turn off the heat and let the filling cool slightly.

2. Assemble the Pockets Preheat your oven to 400°F (200°C).

Take each halved tortilla. Place a layer of shredded mozzarella in the center, followed by 2–3 tablespoons of the beef filling.

Fold the tortilla into a triangle shape and press the edges to seal. Repeat with all the tortilla halves.

3. Bake Grease a round baking dish with garlic butter. Arrange the prepared beef pockets in the dish.

Brush the tops generously with more garlic butter. Sprinkle generously with mozzarella and cheddar cheese.

Bake for 15–20 minutes, or until the cheese is fully melted, bubbly, and golden.
