Ingredients
For the Chicken
- 2 lb (900g) boneless chicken thighs or breast, cut into small cubes
- 3 tbsp chipotle peppers in adobo sauce (blended into a smooth paste)
- 2 tbsp fresh lime juice
- Salt to taste
- 1 tsp black pepper
- 1 tbsp garlic powder
- 1 tsp onion powder
- Oil for cooking
For the Chipotle Sauce
- 3 tbsp mayonnaise
- 2 tbsp sour cream
- 1–2 tbsp chipotle peppers in adobo sauce (blended)
- 1–2 tbsp lime juice
- 2–3 tbsp water (to loosen the sauce)
For the Fresh Salsa
- 1 large red onion, diced
- 2 tomatoes, diced
- 1 jalapeño, diced (remove seeds for less heat)
- 2 tbsp lime juice
- 1 tbsp fresh cilantro, chopped
- Salt to taste
For Assembling
- 15–20 mini flour tortillas
- 2 cups mozzarella cheese, shredded
Method
1. Marinate the Chicken In a large bowl, mix the chipotle paste, lime juice, salt, black pepper, garlic powder, and onion powder. Add the cubed chicken and toss until every piece is well coated. Cover and marinate in the fridge for at least 30 minutes (up to 2 hours for stronger flavor).
2. Prepare the Salsa Combine diced red onion, tomatoes, jalapeño, chopped cilantro, lime juice, and salt in a bowl. Mix well and set aside.
3. Cook the Chicken Heat oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer (cook in batches if needed). Cook for 5–6 minutes per side until nicely browned and crispy on the outside and fully cooked inside. Remove and set aside.
4. Make the Chipotle Sauce Whisk together mayonnaise, sour cream, chipotle paste, lime juice, and water (add water gradually until you reach a nice drizzle consistency).
5. Assemble & Crisp the Tacos
- Heat a large skillet over medium heat and add a little oil.
- Place a mini tortilla in the pan. Sprinkle mozzarella cheese on one half.
- Add a few pieces of crispy chipotle chicken on top of the cheese.
- Fold the tortilla in half and press gently with a spatula.
- Cook for 2–3 minutes until the tortilla is golden and crispy, then flip and cook the other side for 1–2 minutes until the cheese is fully melted.
- Repeat with the remaining tortillas.
6. Final Assembly Spread some chipotle sauce on each crispy taco, add a spoonful of fresh salsa, and drizzle more sauce on top if desired.
