HashBrown with Parmesan

Crispy, golden, cheesy Hash Browns loaded with garlic, herbs, and plenty of Parmesan! These are perfectly seasoned, extra crunchy on the outside, and tender inside. Way better than frozen ones!

Ingredients

  • 4–5 medium russet potatoes
  • 1 egg
  • 2 tbsp cornstarch
  • ¼–⅓ cup freshly grated Parmesan cheese (plus extra for topping)

Seasoning:

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked paprika is best)
  • ½ tsp black pepper
  • Salt to taste
  • 1 tsp mixed dried herbs (oregano, parsley, thyme, etc.)
  • Oil for frying

Instructions

  1. Parboil the Potatoes Peel the potatoes and cut them in half. Boil in salted water for 5 minutes only — they should be slightly tender but not fully cooked. Drain immediately.
  2. Cool & Grate Let the potatoes cool completely. Grate them using a box grater.
  3. Remove Moisture Place the grated potatoes in a clean kitchen towel and squeeze out as much water as possible. This is the secret to crispy hash browns!
  4. Mix the Ingredients In a large bowl, combine the grated potatoes, egg, cornstarch, grated Parmesan, and all the seasonings. Mix gently until everything is well combined. Don’t overmix.
  5. Shape Form the mixture into thin oval or round patties. Place them on a parchment-lined tray.
  6. Freeze Freeze the patties for 15–20 minutes until firm. This helps them hold their shape while frying.
  7. Fry Heat oil in a pan over medium heat. Cook the hash browns for 4–5 minutes on the first side until deep golden and crispy. Flip carefully and cook the other side until crispy and golden.
  8. Finish Sprinkle extra grated Parmesan on top while they’re still hot so it melts slightly.

Pro Tips for Extra Crispy Hash Browns

  • Russet potatoes give the best texture.
  • Squeeze out maximum moisture — wet potatoes = soggy hash browns.
  • Don’t overcrowd the pan. Cook in batches.
  • For even crispier results, you can air fry at 400°F (200°C) for 12–15 minutes, flipping halfway.
  • Add a pinch of cayenne for a spicy kick.

Serving Suggestions

Serve hot with eggs, bacon, ketchup, sour cream, or garlic aioli. These also make a great side for burgers or fried chicken.
