Ingredients (Makes 8–10 Tacos)

For the Smash Burgers:

  • 700g (1.5 lb) ground beef (80/20 preferred)
  • 8–10 mini flour tortillas
  • 10 slices cheddar cheese
  • Salt & black pepper to taste
  • Caramelized onions (about ½ cup)

Instructions

  1. Make the Sauce Mix all sauce ingredients in a bowl until smooth and creamy. Set aside (it tastes even better after 10–15 minutes).
  2. Prepare the Beef Divide the ground beef into 8–10 small balls (roughly 70g each). Don’t overwork the meat.
  3. Smash & Cook Heat a large skillet or griddle over medium-high heat with a drizzle of avocado oil. Place a mini tortilla down, then put a beef ball on top. Using a burger press or heavy spatula, smash the beef into a thin layer covering most of the tortilla. Season the top generously with salt and black pepper. Cook for 2–3 minutes until the edges are crispy and browned.
  4. Add Cheese Flip the taco, place a slice of cheddar cheese on the beef, and cook for another 1–2 minutes until the cheese melts.
