Ingredients (Makes 2–3 large wraps)
For the Beef Mixture:
- 700g ground beef
- 1 medium onion, roughly chopped
- ½ cup fresh parsley
- 2 tbsp paprika
- 1 tsp black pepper
- Salt to taste
White Sauce (Tzatziki-style):
- ½ cup Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tsp fresh dill (or ½ tsp dried)
- ½ tsp garlic powder
- Lemon juice (to taste)
- Salt to taste
Spicy Sauce:
- Harissa
- Sriracha
- A splash of water (to thin slightly)
Salad & Toppings:
- 1 red onion, thinly sliced
- 1 tsp sumac
- 2 tbsp fresh parsley, chopped
- Pickles, sliced
- Olive oil (for drizzling)
Others:
- Lebanese flatbread or large pita bread
Instructions
- Make the Beef Mixture In a food processor or blender, combine ground beef, chopped onion, parsley, paprika, black pepper, and salt. Blend until well combined and slightly pasty (but not completely smooth).
- Assemble the Wrap Cut the flatbread in half. Open one half and spread a thin, even layer of the raw beef mixture on it. Cover with the other half of the flatbread, creating a sandwich. Press gently with your hands or a fork to spread the meat evenly inside.
- Cook Grill the wrap in a sandwich press, panini maker, or hot skillet for 5–10 minutes, flipping halfway, until the bread is golden and crispy and the beef is fully cooked.
- Prepare the Sauces
- White Sauce: Mix Greek yogurt, squeezed grated cucumber, dill, garlic powder, lemon juice, and salt.
- Spicy Sauce: Mix harissa and sriracha with a little water to reach your desired consistency.
- Make the Sumac Salad Toss thinly sliced red onion with sumac and chopped parsley.
- Final Assembly Once grilled, carefully open the wrap slightly. Spread the white sauce generously, drizzle with spicy sauce and olive oil. Add the sumac onion salad and pickles. Close the wrap, cut in half if desired, and serve immediately.
