Ingredients (4–5 Wraps)

For the Chicken Marinade:

  • 2 large chicken breasts (400g), sliced into thin strips
  • 2–3 tbsp olive oil
  • 1 tbsp tomato paste
  • Juice of 1 lemon
  • Seasoning:
    • 1 tbsp paprika
    • 1 tbsp turmeric
    • 1 tsp garlic powder
    • 1 tsp chili powder
    • ½ tsp black pepper
    • ½ tsp salt

Garlic Sauce:

  • 3 tbsp yogurt
  • 2 tbsp mayonnaise
  • 3–4 garlic cloves, minced
  • 1 tbsp chopped parsley
  • Salt to taste

Sumac Onions:

  • 1 red onion, thinly sliced
  • 1 tsp sumac powder
  • 1 tbsp chopped parsley
  • Juice of ½ lemon

To Assemble:

  • 4–5 large wraps (26 cm)
  • Fresh cucumber, sliced
  • Tomato, sliced or diced
  • French fries (crispy)
  • Harissa or Sriracha (optional, for heat)
  • Extra parsley for garnish

Instructions

  1. Marinate the Chicken In a large bowl, combine chicken strips with olive oil, tomato paste, lemon juice, and all the seasonings. Mix well until every piece is coated. Let it marinate for at least 30 minutes (1–2 hours is better).
  2. Cook the Chicken Heat a large pan or skillet over medium-high heat. Cook the chicken in batches for 5–7 minutes until golden brown and fully cooked. Set aside.
  3. Make the Garlic Sauce Mix yogurt, mayonnaise, minced garlic, parsley, and salt in a bowl. Adjust consistency with a little water if needed. Chill until ready to use.
  4. Prepare Sumac Onions In a small bowl, toss sliced red onion with sumac powder, parsley, and lemon juice. Let it sit for 5–10 minutes.
  5. Assemble the Wraps Warm the wraps slightly. Spread a generous layer of garlic sauce on the wrap. Add cooked chicken, sumac onions, sliced cucumber, tomato, and a handful of crispy fries. Drizzle more garlic sauce and harissa/sriracha on top.
  6. Fold & Toast Fold the bottom of the wrap up, then fold in the sides. Place seam-side down in a hot pan and toast for 2–3 minutes on each side until golden and crispy.

Pro Tips

  • Slice chicken thinly for faster cooking and better texture.
  • Don’t skip the fries inside the wrap — they add the perfect crunch!
  • Make extra garlic sauce — it’s addictive and great as a dip.
  • For meal prep, store chicken and sauces separately and assemble fresh.

Serving Suggestions

Serve immediately with extra garlic sauce on the side and a cold drink. These wraps also pair beautifully with tabbouleh or a simple salad.
