Ingredients

For the Chicken

  • 1 lb boneless chicken breast
  • Salt to taste
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp oil + more for cooking

For the Creamy Filling

  • ½ red onion, finely diced
  • ½ cup carrots, boiled and cubed
  • ⅓ cup cabbage, finely diced
  • ½ cup green onion, sliced
  • 1 tbsp fresh parsley, chopped
  • ¾ cup mayonnaise
  • ⅓ cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • Salt to taste

For Assembly

  • 20–25 slices white bread
  • 10 slices cheddar cheese
  • 10 slices provolone cheese
  • Butter (for toasting)

Method

1. Cook the Chicken In a bowl, season the chicken breasts with salt, smoked paprika, black pepper, garlic powder, onion powder, and 2 tbsp oil. Mix well to coat.

Heat oil in a pan over medium heat. Cook the chicken for 12–15 minutes, flipping occasionally, until fully cooked. Remove from the pan, let it cool slightly, and shred it using two forks.

2. Prepare the Creamy Filling In a large mixing bowl, combine the shredded chicken, red onion, carrots, cabbage, green onion, parsley, mayonnaise, sour cream, Dijon mustard, garlic powder, black pepper, smoked paprika, and salt.

Mix everything thoroughly until well combined and creamy. Taste and adjust seasoning if needed.

3. Assemble the Sandwiches

  • Take one slice of bread and spread a generous layer of the creamy chicken filling.
  • Place a slice of cheddar cheese on top.
  • Add another layer of chicken filling.
  • Top with a slice of provolone cheese.
  • Cover with another slice of bread. Repeat with the remaining ingredients.

4. Toast the Sandwiches Heat a skillet or pan over medium-low heat. Add butter and place the sandwich in the pan. Toast for 3–4 minutes per side until the bread is golden brown and crispy and the cheese is melted and gooey.

Pro Tips

  • Use a mix of mayonnaise and sour cream for the perfect creamy texture.
  • For extra crunch, add a thin layer of crushed potato chips inside the sandwich.
  • Don’t cook on high heat — medium-low ensures the cheese melts properly without burning the bread.
  • You can prepare the chicken filling a day ahead and store it in the fridge.
  • For a spicy kick, add chopped jalapeños or red chili flakes to the filling.
