This is the ultimate comfort food mashup! Creamy, cheesy mac & cheese loaded with crispy bacon, spicy buffalo chicken, and drizzled with ranch. It’s rich, indulgent, and packed with flavor — perfect for a weekend treat or when you’re craving something seriously comforting.
Ingredients
For the Mac & Cheese:
- 1 box corkscrew pasta (or your favorite shape)
- ½ lb bacon, chopped
- 3 tbsp flour
- 1 packet Hidden Valley Ranch seasoning
- 1 tsp paprika (plus extra for topping)
- 1 can evaporated milk
- 2 cups whole milk
- ½ cup heavy cream
- 1 tbsp hot sauce
- 1 tbsp mustard
- 1 cup shredded Gouda
- 1 cup shredded mozzarella
- 1 cup shredded Colby Jack
- 1 cup shredded cheddar (plus extra for topping)
- Salt & pepper to taste
- Cooked buffalo chicken (amount to your preference)
- Extra ranch for drizzling
Healthy Ranch (Optional Lighter Alternative):
- 1 cup Greek yogurt
- Juice of ½ to 1 lemon
- Water (to thin)
- Dried dill
- Dried parsley
- Dried oregano
- Onion powder
- Garlic powder
- Salt & pepper
Instructions
- Cook the Bacon Chop the bacon and cook it in a large pot until crispy. Remove the bacon pieces and set aside, leaving the bacon grease in the pot.
- Make the Roux Add the ranch seasoning and paprika to the bacon grease. Toast for about 30 seconds. Stir in the flour and cook for 1–2 minutes to form a roux.
- Build the Sauce Slowly whisk in the evaporated milk, whole milk, and heavy cream. Add the hot sauce and mustard. Let the sauce cook and thicken.
- Add Cheese Reduce heat to low. Stir in the Gouda, mozzarella, Colby Jack, and cheddar until the sauce is smooth and creamy. Season with salt and pepper.
- Combine Fold in the cooked pasta and some of the crispy bacon.
- Bake Pour half the mac & cheese into a baking dish. Layer with extra shredded cheese, then add the remaining mac. Top with more cheddar and a sprinkle of paprika. Bake at 325°F (163°C) for 20–25 minutes, then broil for 3–5 minutes until the top is golden and crispy.
- Serve Scoop into bowls, top with buffalo chicken, remaining crispy bacon, and a generous drizzle of ranch.
Healthy Ranch
Mix Greek yogurt with lemon juice and a little water until smooth. Add dried dill, parsley, oregano, onion powder, garlic powder, salt, and pepper. Adjust seasoning to taste.
