Warm, spiced, and full of flavor — this classic Shakshuka is the perfect one-pan dish for breakfast, brunch, or even a quick dinner. Eggs poached in a rich, smoky tomato sauce with bell peppers and spices, finished with melty mozzarella and creamy feta. So comforting!

Ingredients (Serves 2–3)

  • 1–2 tbsp olive oil
  • 1 tsp butter
  • 4–5 ripe tomatoes, roughly chopped

Seasoning:

  • 1 tsp cumin

Instructions

  1. Heat olive oil and butter in a large skillet or pan over medium heat.
  2. Add the chopped tomatoes to the pan.
  3. Place the diced onion in the center of the pan and arrange the sliced red bell pepper around the edges.
  4. Cover and cook for 10 minutes.
  5. Continue cooking uncovered for another 10–15 minutes, stirring occasionally, until the vegetables are soft and juicy.
  6. Remove the tomato skins (they should peel off easily at this point).
  7. Mash the tomatoes directly in the pan using a fork or potato masher until you get a chunky sauce.
  8. Add all the seasonings (cumin, paprika, garlic powder, oregano, chili flakes, black pepper, and salt). Mix well. (Optional: Stir in 1 tbsp tomato paste for richer color and taste.)
  9. Stir in shredded mozzarella cheese until it melts into the sauce.
  10. Make small wells in the sauce and crack the eggs into them.

  12. Garnish with fresh chopped parsley and crumbled feta cheese.
