Instructions
1. Prepare the Beef Mixture
- Heat a little oil in a pan over medium heat. Add chopped onion and sauté until soft.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until fully browned, breaking it up as you go.
- Stir in tomato paste, soy milk, diced red & green bell peppers, and all the seasonings.
- Cook for a few more minutes until the mixture thickens slightly. Remove from heat and let it cool a bit.
2. Prepare the Cones
- Cut each tortilla in half.
- Roll each half into a cone shape and secure the overlapping edge with a toothpick.
Baking Method (Oven)
- Preheat oven to 190°C (375°F).
- Place the cones on a parchment-lined baking tray. Lightly spray with cooking spray.
- Bake for 10–12 minutes until golden and crispy.
- Remove from oven, carefully fill each cone with the beef mixture, and top with shredded mozzarella.
- Return to the oven for 5 more minutes until the cheese is melted and bubbly.
- Garnish with chopped parsley and serve immediately.
Air Fryer Method
- Preheat air fryer to 180°C (356°F).
- Lightly spray cones with cooking spray and arrange them in the basket (don’t overcrowd).
- Air fry for 6–8 minutes until crispy and golden.
- Fill with beef mixture and top with mozzarella cheese.
- Air fry again for 3–4 minutes until cheese melts.
- Garnish with parsley and serve warm.
Pro Tips
- Warm the tortillas slightly before rolling — they become more flexible and less likely to crack.
- Don’t overfill the cones or they may become soggy.
- For extra crispiness, lightly brush the outside of the cones with oil.
- You can make the beef filling ahead of time and store it in the fridge for up to 2 days.
- Adjust spice level by increasing or decreasing chili powder.
