  • 2 tbsp tomato paste

  • Salt to taste
  • ½ tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp smoked paprika
  • ½ tsp turmeric powder
  • ½ tsp black pepper
  • 1 tsp garam masala
  • ½ tsp sugar
  • 1 cup unsweetened heavy whipping cream
  • 1 tbsp chopped parsley
  • 1 tbsp butter

For the Garlic Butter:

  • ½ cup unsalted butter, softened
  • 3–4 garlic cloves, finely minced
  • 1 tbsp chopped fresh parsley
  • Pinch of salt

To Assemble:

  • 1 cup shredded mozzarella cheese
  • 1 large loaf of bread (French bread, Italian loaf, or baguette)

Method

  1. Marinate the Chicken In a medium bowl, mix the chicken pieces with salt, coriander powder, red chili powder, cumin, smoked paprika, turmeric, black pepper, garam masala, Greek yogurt, oil, and lemon juice. Cover and marinate for at least 30 minutes (longer is better).

  5. Assemble & Bake Preheat oven to 400°F (200°C). Slice the loaf in half lengthwise. Generously spread the garlic butter on both halves. Spoon a layer of butter chicken sauce over the bread. Sprinkle with mozzarella cheese and add the sliced chicken pieces. Drizzle more sauce on top. Bake for 12–15 minutes or until the cheese is bubbly and golden and the edges of the bread are crispy.
  6. Serve Slice into pieces and serve hot. Garnish with extra parsley or a sprinkle of garam masala if desired.
